Dan afblussen met een scheutje Eau de Vie de Prunelles (ook uit Luxemburg, maar daarover later meer).<br \/>\nEen flinke scheut rode wijn erbij en gelijke hoeveelheid wildbouillon. Kruiden met peper, zout en een blaadje laurier. Dan rustig een uurtje laten stoven. Het vlees uit de pan nemen en in plakken snijden.
